Millet Oat Pancakes (Dairy free)

I was feeling experimental last week and decided to try out a new pancake concoction. I threw in a bunch of stuff I had in my pantry and the result was actually pretty delicious. I’ll definitely be making these again!

Ingredients
½ cup unbleached flour
½ cup whole wheat flour
3 tbsp millet
3tbsp quick oats
2tbsp ground flax
1 tsp salt
2 tsp baking powder
1 ½ cups non dairy milk
1 egg or egg replacer
2 bananas sliced
Hemp hearts and maple syrup for topping



Heat up a skillet over medium while you mix up all the ingredients. Mix up your dry and then add you egg and milk. You may need to adjust the amount of milk depending on how thick you like your pancakes. Add a small amount of coconut oil to the pan before adding however much batter you like. I like a few small pancakes but the kids like one giant pancake so whatever you prefer. This recipe makes about 6 large pancakes. Add in a few slices of banana on top of the wet batter. When the batter starts to bubble flip the pancakes over once brown take out and place on a warm plate in the oven. Repeat. Once all the pancakes are done top them with any fruit you like, some hemp hearts (or a lot) and a drizzle of maple syrup. Enjoy!
