This salad is addictive! It won’t last long in your fridge! It’s a favorite in our house during the summer months.
1 head broccoli, cut into bit-sized pieces
1/2 cup shredded carrot
1/2 cup red onion, finely chopped
2-4 tbsp vegan mayo
2 tbsp raw apple cider vinegar
2 tbsp fresh lemon juice
1 tbsp maple syrup
1/2 tsp minced garlic or garlic powder
1/4 cup sunflower seeds or pumpkin seeds
1/4 cup raisins
Spash non dairy milk as needed
salt and pepper to taste
Combine vegan mayo, maple syrup, lemon juice, vinegar, garlic and salt and pepper adding the non dairy milk as needed to reach your desired thickness.
