Coconut Rice (Vegan)

Depending on the type of rice you chose to work with this will take about 1 hour to cook. My daughter is an especially big fan of this rice. Who can blame her? It’s delicious! 



Makes 3-4 servings

Ingredients:
1 cup any rice of your choosing (I use organic short grain)
2 cups water
1 small can organic coconut milk
½ cup raisins
Salt to taste


Cook your rice according to the instructions. Once most of the water has been absorbed add in your raisins and coconut milk and increase the heat to medium. Once the rice has been brought back to a simmer reduce heat to low and let sit for 15 minutes. Please check your rice to make sure it is cooked through and doesn’t require more cooking time. If needed you can add 1-2 tbsp of water and cook for another 10 minutes, then remove from heat and let sit for about 10 minutes.
